Tonight Roy returned to work.  Still in pain but I couldn't talk him into staying home.  Now that is dedication!  Poor guy sure is suffering! 

When I got home from work, I started the water on the back yard, and visited the garden.  picked some cucumbers...4.  I also cut some rhubarb.  I saved some aside for my mother and I froze the rest for us.  4 quarts!  feels like I accomplished something.  I'm so anxious to start canning.  Our shelves are looking so bare!  I'm wanting to can some beef and some beef broth too.  Need to get that done.  Then I'll have more room in our freezer.  I might try my hand at canning chicken this year!   I haven't done it for years, and I miss the fact of having chicken and broth at the ready for a quick lunch for guests. 

We should be able to eat well this winter with this plan.  Just think...canned chicken, canned beef, canned chicken and beef broth, frozen beef and once a month cooking meals, canned beans, pickles, tomatoes, frozen corn...wow...sure hope it works out!

LOL.  I was going through my recipes to find a dessert for this Sunday.  I found one.  Not sure if it is large enough to feed my crew.  (there is a note of sarcasm!)  You'll understand when you see the recipe.  I'm snickering as I type it.  Ha! Ha! Ha!

Plain Ole Vanilla Wedding Cake

800 lbs sugar
25 cups vanilla
21 1/2 lbs of baking powder
7200 stiffly beaten egg whites
75 gallons butter
600 lbs sifted cake flour
94 gallons of milk. 

Cream sugar, butter and vanilla together in bathtub.  Stir together flour and baking powder in separate tub.  Find a larger container, perhaps an unused grain silo, add cake flour to creamed mixture alternately adding milk.  Fold in egg whites.  Pour into as many number 12 wash tubs as you can find, making all layers about the same size.  Cover wash tubs and place in building that will take 28-30 minutes to burn down.  Remove from debris.  Frost with white icing using relatively  new rowboat oars. 

I do not know why I have kept this particular recipe.  Probably to have a good laugh.  How funny is this!  I thought I'd share it with all of you and hope you get a at least a grin on your face.

Garden

Well, can I hear a WAHOO.....I got to pick a whole sum of 6 green beans tonight!  Whoopie doo!!!!  At least it is a start!  so...6 green beans, 2 cucumbers and 1 jalapeno.  Like I said, at least it is a start! 

Roy came through his procedure fine yesterday.  today he is having quite a bit of pain.  Pain pills aren't helping!  I feel so bad for him.  He always has dealt with pain so well, never complain or take pain pills.  Now.....he is almost in tears because of the pain. 

I've watered the yard and the garden!  I made mashed potatoes for dinner and did a load of laundry!  I go to the front yard and what do I see????  Roy watering the front flower garden, doubled over in pain.  That man is gonna be the death of me yet!  Shame on him.  I made him come back in the house.  Now he is upstairs snoozing in the chair. 

This weekend I will making Breakfast casseroles for church on Sunday.  I am working on the menu now and will post it and the recipes later.

July 23, 2011 #2

Oh what a wonderful day!  This morning I spent with my husband.  We went to the Farmer's market and I bought some new potatoes for creamed peas and potatoes.  I also bought a kohlrabi.  Just 1.  Roy likes them...I can tolerate them...so we will have one with our lunch tomorrow.  I also bought some rosemary and parsley.  We went to WalMart after that to look for some herb plants...I got some rosemary.  Then we went riding around town looking things over.   Those are special times with us as we did it a lot when we were dating and first married.  so we enjoy that a lot.  Have I mentioned before that we are very simple people!  We really enjoy riding around in the county and looking things over, but we haven't done that in a while, since the gas prices are so high and one of us is usually busy!  Ha!  Then we went to McDonalds for lunch!  Again...see, how "simple" we are...I look forward to a date to McDonalds.  We enjoy watching all the out of state people, and seeing all the out of state license plates.  Well then we came home to get things done. 

I made some blueberry scones for Roy for breakfast tomorrow and he read the paper and snoozed. 




Then I went to a friends house to help her daughter with her muffins for 4-H for the fair.  I so enjoyed that!  It is so fun to help out the young cooks and teach them.  I was home in time to see Roy off to work.  I also had washed our bedding and hung it on the line this morning before we went to the Farmer's Market, so I had those take off of the clothesline!  Nothing like the smell of fresh air, clean sheets to sleep on at night. 

I made dessert for tomorrow.  No pie!  I had some things that needed to be used up, so I made it instead of the rhubarb pie.  Here is the recipe

DIRT DESSERT

1 1/4 lbs Oreo cookies crushed
3 lg pkgs vanilla Instant pudding
12 oz soft cream cheese
6 oz cool Whip
4 1/2 cup milk

Whip together pudding, milk, cream cheese, Cool Whip.  Layer the crushed cookies in 9 x 13 cake pan and then the pudding mixture. 

You could make it in a flour pot and decorate with gummy worms and plastic flowers.  Layer the flower planter with crushed cookies and pudding mix and decorate with worm and flowers. 

I also made a loaf of Italian Bread.  I'll make it into garlic bread tomorrow for our spaghetti lunch.  It is on it's second rising now. 

1-1/2 cups warm water (110 degrees F/45 degrees C)
1/2 teaspoon white sugar
1-1/2 teaspoons active dry yeast
1-1/2 teaspoons salt
3-1/2 cups all-purpose flour


Add the sugar and yeast to the warm water and let proof.

Stir in 4 cups of flour and beat until smooth. Cover and let rest for 15 minutes.
Beat in the salt and then add enough remaining flour to make a stiff dough. Knead until as soft and smooth. Turn in a greased bowl, cover, and let double in size. (I put it in the oven with the light on - perfect rising temperature.)
Once doubled, punch down and divide into three. Place back in the bowl, cover, and let rise.
Once doubled again, punch down and form into three fat "footballs." Grease heavy cookie sheets and sprinkle with corn meal. Place the bread on the sheets, cover with a towel, and let rise.
Once risen, mist with water and place in a preheated 450 degrees F (230 degrees C) oven. Mist loaves with water and turn occasionally while they bake. Bread is done when golden brown and sounds hollow when tapped on the bottom.



As I mentioned, we are having spaghetti and meatballs for lunch tomorrow.  I've made my own spaghetti sauce mix for years.  Huge hit with my kids.  I make it up now and share with them.  Here is the recipe for the mix AND the sauce. 

MIX: 

1 T instant minced onion
1/4 t instant minced garlic
1 T parsley flakes
1 t sugar
1 T cornstarch
1 1/2 t salt
3/4 t Italian season. 

Combine all ingredients in a small bowl until evenly distributed.  Spoon mixture onto a 6 inch square of aluminum foil and fold to make air tight.  Label.  Store in a cool, dry place.  Makes 1 pkg about 1/3 cup.  (I store in a jar)

SPAGHETTI SAUCE

1 lb lean ground beef
2 8 oz cans tomato sauce
1 6 oz can tomato paste
2 3/4 cups tomato juice or water (I always use water)
1 pkg (1/3 cup) spaghetti seasoning mix

Brown ground beef in a medium skillet over medium high heat.  Drain excess grease.  Add tomato sauce, tomato past and water.  Stir in Spaghetti Seasoning Mix.  Reduce heat and simmer 30 minutes, stirring occasionally. 


Now for the creamed potatoes and peas. 

desired amount of potatoes...boiled until tender
peas (frozen or fresh) cooked until tender. 

2 T butter
2 T flour
1/2 t salt
1/4 t pepper
1 1/2 cups milk. 
 melt the butter in a saucepan; add flour, salt and pepper to form a paste. Gradually stir in milk. Bring to a boil; boil for 1 minute.  cook until thickened and bubbly. Drain potatoes and peas; place in a serving bowl. Pour sauce over and stir to coat. Serve immediately.               

There you have my menu for our lunch tomorrow. 

I also made a batch of guacamole....

4 avocados, pitted
1/2 onion, diced
1 tomato, diced
1 clove garlic, minced
1/2 tsp lime juice
mayonnaise to your taste. 



I've had some requests for the SOUR CREAM CHOCOLATE MUFFINS (here it is Mary!)

5 oz semisweet Chocolate
2 baking chocolate squares
1/3 cup butter
3/4 cup sour cream
2/3 cup brown sugar, packed

1 egg
2 tsp vanilla
1 1/2 cups flour
1 tsp baking Soda
1/4 tsp salt
1/2 cup Chocolate chips

Mix semisweet chocolate, baking chocolate, and butter together, then melt carefully in microwave or over simmering water in double boiler.  Allow to cool to lukewarm.  Mix sour cream, sugar, corn syrup, egg and vanilla.  Blend with melted chocolates.  Blend flour, soda and salt, then add to the chocolate mixture and blend very well.  Add the chocolate chips.  Pour batter into 12 greased muffin tins.  Bake in preheated 400 degree oven for about 20 minutes.  Removed from muffin tins and allow to cool on wire racks. 

When freezing, cool completely, then freeze in individual baggies, removing as much air as possible from each baggie before sealing. 

Yield 12 muffins. 

My goal for this coming month is to post a recipe every evening.  My husband works evenings Wednesday through Sunday for the next 4 weeks, so will free me up a little bit to be able to post more often.  so hopefully I will be able to accomplish that.

I was pretty excited last night.  I picked the first 2 cucumbers of the season.  Roy likes them sliced up with onion in vinegar.  So one I sliced up for that and the other will be sliced up and ate as is. 

This week was Vacation Bible School at church.  It was very tiring, but extremely fun and rewarding!  The kids were fantastic and so much fun.  We all had so much fun and learned so much.  The songs were fun and the Bible verse was encouraging.    The bible with fire in it was a HUGE hit with the kids.  Left a big impression on them and the remembered that the bible has fire in it.  I was so exhausted I could barely make it home and fall into bed by Wednesday night.  But, you know what....I'd do it all again....it was so much fun.  Oh the water balloon fight was fun!  the kids wanted to get me wet and they succeeded.  I was drenched!  My how fun that was.  My little partner for it, Meadow, was even more wet than I was and she loved it.  She is a special young lady, they all are.  May God richly bless them all and all the little ones! 

I had every intention in sleeping in today.  But at 7:30 a.m. I'm sitting here writing this!  So, when I'm done with this, I will go outside and work in the yard while it is still cool out.  Then I think this afternoon I'll make a pie...try to perfect my pie crust making.  How does rhubarb sound?  I have a lot of rhubarb in my garden, so I'm gonna try making the crust and make a rhubarb pie for our dinner tomorrow.  I think I might try freezing the rhubarb too, before it goes to seed.  I'm going to make some bread today so we can have garlic bread for our spaghetti dinner tomorrow.  Amber and the girls and a friend and her children from church and probably Levi and Brooke and the baby will be here for dinner.  So...the menu is homemade spaghetti and spaghetti sauce, homemade garlic bread, green beans, and homemade rhubarb pie.  Pictures?  I'll TRY.  I'm not very good at it.  I get so involved in my cooking and baking, I forget!  But I'll try.  

Well I better get off and get in the yard while it is still somewhat cool outside.  There are weeds that are taunting me and grass needing cut!

Bread Starter

I'm so disappointed...it didn't work.  Just sat there...didn't ferment at all.  So...I will try another one.  This new one has to "ferment" for 10 - 14 days, so I guess I'll have to be patient!  Darn it anyway!  I was hoping to try it out and at least make a loaf or two of bread.  I need to have a warm place to sit this and let it "ferment".  Think I'll sit it on top of my refrigerator!  Since my range is electric, can't use the pilot light for it.  The top of the refrigerator is the warmest place I can think of. 

This morning I got up early, well early for me on a Saturday, and hung clothes on the clothesline, pulled some weeds, and watered the garden some more.  I also did "poop" patrol in the backyard.  Then it got too hot to be outside, so came inside to do some things.    I finished putting recipes into my notebooks and did another load of laundry.  I shredded 5 lbs of cheese for our salads and casseroles this week.  I washed the food processer and then I chopped up some reese's peanut butter cups and some baby ruth candy for toppings for our ice cream.  Again I washed the food processer. 

For dinner we had the dreaded left overs.  Smothered steak, baked beans, potatoes, and salad.  Then I made a trip to Wal-Mart for supplies for my muffins!  Of course, social person me, I saw several people that I know and don't get to chat with much, so had to take advantage and chat for a bit.  When I finally got back home, I started making my muffins.  I got the pumpkin ones whipped up and in the oven as I'm typing this.  I had to take a break and sit down and rest.  I'll post the pictures and the update of the baking later on this evening. 

Tomorrow for lunch I'm considering making Indian Tacos.  I'll post the recipe later too.  Been several years since we had them and I'm kind of hungry for them.  although I can't eat the shell, but the rest of it I can.  I'll serve with lettuce, tomatoes, onions, guacamole, cheese, sour cream.  For dessert, I am thinking of Rhubarb Pie.  I need to hone my pie crust skills.  After the muffins are done, I'll see how I feel and might make the pie.  If I had room in my freezer, I'd freeze some rhubarb, but I don't have the room.  I've never tried canning it....Mmmm 

Well muffins are done.  sorry, no pictures.  I got too busy and forgot to take pictures.  I can take pictures of the end product I guess.  Wow, does my back hurt!  Guess I should have rested more!  I'll be fine in the morning though!  Wow...so many muffins.  Also made pumpkin/chocolate Chip bread and applesauce nut bread!  so..should have enough to feed the masses at church tomorrow. 

I also mixed up my bread starter and got it "sitting"...so 14 days from now I should know how it is going to work out! 

The Peanut butter and jelly muffins, the jelly was strawberry.  I had it opened in the fridge already, so decided to use it.  The Chocoholic muffins sure lives up to its name, baking chocolate, chocolate chips, melted togther then add chocolate chips added to batter right before baking.  For the applesauce bread...I had some homemade applesauce that had cinnamon in it.    I cut down the cinnamon in the recipe, so it won't be so overpowering.

July 14, 2011 Muffins

Well those of you that have followed me for a bit, know that once a month I bake muffins for our social time at church.  This weekend is that time.  I used this quiet time this evening to get my "muffin menu" decided on.  I think I've got a good variety chosen.  Here they are:  Apple Cinnamon Muffins; Sour Cream Chocolate Muffins; Homemade Amish Pumpkin Muffins; PB & J Muffins.  The PB & J ones has my mouth watering!  Been a long time since I made them.  I forgot all about them. 

I will post recipes along with pictures of the muffins.  I'm hoping to start them tomorrow evening, that way I won't have so many to do on Saturday and I get my much neglected laundry done too.  I'm hoping to get our bedding laundered and hung on the clothesline.  I just love the smell and feel of linens after being hung on the clothesline all day.  The smell is wonderful.  So clean and crisp. 

From the looks of things, my garden will produce fairly well this year....as long as the white hard stuff doesn't come down.  I have a couple of tomatoes on my plant and there is a jalapeno ready to be picked.  Lots of blossoms on the cucumbers and zucchini and peppers.  The okra plant is coming along...one died (may it RIP)  Oops..need to go check the water on the beans.  Well the water was fine, but I didn't get my entire garden watered, so hopefully it won't fry tomorrow before it gets a drink tomorrow night!  I was planning on going to an auction on Saturday to try to buy some crocks for my "pickling".  My dear sweet husband says no...dangerous for us to go to sales...spend too much money, but I'm in bad need of some good crocks! 

Tomorrow night I need to "feed" my bread starter too.  This will be my first batch out of this starter...first time in a very long time that I've made bread from a starter...so I will let you know how it goes.  Now...what to do with bread if it is a failure!  Maybe breadcrumbs!      If it works....it is a very easy starter and I will share the recipe if anyone would be interested.

July 9, 2011 dessert

For dessert....decided on vanilla ice cream with homemade chocolate syrup.  here is the recipe for the chocolate syrup

Ingredients
  • 1 1/2 cups water
  • 1 1/2 cups white sugar
  • 1 cup cocoa powder
  • 1 dash salt
  • 1 teaspoon vanilla extract
Combine the water, sugar, cocoa powder, and salt together in a saucepan over low heat; whisk constantly until the mixture thickens and begins to simmer. Remove from heat and stir the vanilla into the sauce. Serve warm or cover and refrigerate until serving.       

And...when I went to add to my "honey butter" I discovered we are out of butter....so we had to get by with what we had!  So wasn't as sweet as we'd like, but we had "some" any way.

Today was the first day Roy and I got to spend together, alone, without working on a certain deadline project, in a very long time.  We made a trip to WalMart first thing for some supplies.  Then we pulled weeds, hoe'd the garden.  I grilled a couple of burgers for us for lunch. 

We were given some onions by our wonderful neighbor.  Not the big slicing onions, but smaller ones.  Not pearl...although I'd like to have some pearl onions.  So I dug those up last night.  So today I got a brine started for them and they are in the brine now...gonna be pickled onions!  They need to sit in the brine for 24 hours. 

I also made a starter for some bread.  It has to sit for 3 to 5 days and then you can add to it and then make some bread.  I'm looking forward to that next weekend.  I'll let you know how that turns out! 

I made a big batch of potato salad.  I love dill and the salty taste of it, so I made a dill potato salad.  I'm waiting for it to chill and then I'm gonna dig in. 

DILL POTATO SALAD

Boil potatoes until tender but still some firm.  Add a small amount of onion (I also add garlic for us).  Cut up a hard boiled egg (or two) and add to the drained potatoes. 

In a separate bowl mix 1/2 cup of sour cream and 1/2 cup of mayonnaise, 2 tsp of fresh dill, 1 tsp parsley, 2 T of dijon mustard, 1/2 tsp salt, 1/4 tsp pepper.  Stir well.  Pour over potato mixture and toss gently.  I also add some chopped up dill pickle. 

YUMMY! 

I also made a dozen eggs into deviled eggs, so I have 24 deviled eggs to eat! 

Tomorrow our daughter and granddaughters will be here for lunch.  Son is going to his "in-laws" so they won't be here for us to spoil the new granddaughter....darn it!!!!  For lunch we will be having smothered "steak", baked potatoes, pickled okra, broccoli and cauliflower, homemade buttermilk biscuits with honey butter.  Can't decide on a dessert yet.  I'll post it later. 

SMOTHERED "STEAK"

I'm gonna post how I make it!  I'm going to use up our premade hamburger patties that we got for our 4th of July cookout...usually I just make up hamburger patties from our ground beef.  Anyway....

brown the hamburger patties on both sides in a heavy skillet.  Saute onion slices in butter.  Place the hamburger patties in a greased casserole dish.  Top with the sauted onions.  In the skillet that you browned your hamburger patties in, add more oil or butter if needed, and add about a tablespoon of flour.  When all the oil is absorbed by the flour, add a can of cream of mushroom soup (undiluted) and 1/4 to 1/2 soup can of milk (I use cream if I have it available...I've also used evaporated milk...and also regular milk, but we prefer CREAM)  Cook over medium/low heat.  when all is mixed well and slightly thickened pour over hamburger patties in casserole dish.  (I've also used my homemade brown gravy mix...which is really good too and hubby prefers it that way)  Bake in oven at 325 for about an hour or burgers are cooked all the way through!  Gosh...now I'm hungry and not sure I can wait until tomorrow! 

I'll also make homemade buttermilk biscuits. 

2 cups flour
1/2 tsp salt
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cream of tartar
1 Tbls sugar
1/2 cup shortening
2/3 cup buttermilk

Preheat the oven to 425 degrees.  Grease two 8 inch cake pans.  Put the flour, salt, baking powder, baking soda, cream of tartar and sugar in a bowl.  Cut the shortening into the flour with two knives or a pastry blender until the mixture resembles coarse meal.  Add the mil all at once and stir just until the dough forms a ball around the fork.  Turn the dough onto a lightly floured board and knead 14 times.  Pat until 1/2 inch thick.  Cut into rounds with a 2 inch cutter.  Place touching each other in the cake pans and bake for 15-20 minutes.  (I make these too when we are having fish....I add 1/2 cup shredded cheddar cheese before kneading it and proceed as directed) 

Then I'm going to serve honey butter.  All I do is use softened butter and add honey....just keep tasting a dab until it meets my tastes.  sometimes I add a sprinkle of cinnamon too.  This I keep in a bowl in the fridge.  So yummy.

This week has been so hectic.  #1  We became grandparents for the 4th time on Monday.  An adorable baby girl!!!!   Kaisley Nicole Wassemiller weighing in at 8 lbs 4 oz.  Our son, Levi, is her daddy!  she is so adorable.  I'm so happy to have her in our family.  Mommy, Daddy and baby are doing great! 

#2 got in about 8 hours overtime at work, because we have had some extra cases come up! 

#3 had a 7 year old granddaughter's birthday on Thursday.  Rilynn I cannot believe you are 7 already!  What a beautiful young lady you have grown into and sweet!!!!  you are so sweet and thoughtful and grandma and grandpa love you bigger than the universe. 

Today we worked in our yard.  Getting a shade put up over our patio.  Roy is working on that.  I'm pulling weeds, watering the garden, transplanting flowers, catching up on laundry, drying dill.  I fixed us some burritos for dinner.  I've hung out some laundry on the clothes line too.  I haven't done laundry for a couple of weeks, so it has really piled up!  Now I need to wash bedding and towels and my laundry will be done.  That'll be done tomorrow, hopefully! 

I'm thinking of making some sour dough starter for some bread!  I love to make bread, in case you couldn't tell.  I wish I could eat it, but it just won't go down, so I like making it for others.  I will share the recipe for it all later. 

We are off to the farm shortly, to pick up the shade and to see his brothers and sister.  We will be having a 4th of July BBQ like usual.    This year we are going to serve burgers and brats.  Also Homemade Ice Cream!   Several different flavors.
